Sweet and Sour Chicken

4-5 chicken breasts cut into small chunks
corn starch
eggs, beaten
oil
Dip chicken into cornstarch first, then into eggs and fry in oil. When done, place in a cake pan. Pour the following sweet and sour sauce over top.

Sauce: 3/4 c. sugar
1/2 c. chicken broth
1 Tbs. soy sauce
1/2 apple cider vinegar
3 1/2 T ketchup
Pour over chicken and bake at 350 degrees for 1 hour. Serve over rice. I double the sauce because we like extra.
